My pomegranate tree in Albuquerque usually delivers 20 pounds of fruit in the fall, much of which I squeeze into juice and freeze for holiday cocktails. This mimosa delivers a festive dash of color and a fruity-but-not-sweet flavor. If you don’t have pomegranate juice, substitute pomegranate liqueur for a slightly stronger drink. —Gwyneth Doland

  • 1 ounce pomegranate juice, chilled
  • 4 ounces Gruet Brut
  1. Into a champagne flute, pour the pomegranate juice.
  2. Top with Gruet.
