• 2 28-oz. cans of sweet potatoes or yams
  • 3 large eggs, lightly beaten to mix
  • 1 c. sugar
  • 1 t. vanilla extract
  • 1/2 t. salt
  • 1 c. chopped pecans
  • 1 t. red pepper flakes
  1. Preheat the oven to 350 degrees.
  2. Lightly grease a casserole dish.
  3. In a large bowl, mash the yams with 1 cup of the reserved liquid. It may be necessary to add a little more to get a good, smooth consistency.
  4. Add the eggs, sug­ar, vanilla and salt.
  5. Mix well and pour into the casserole dish.
  6. Sprinkle the pecans over the mixture and lightly sprinkle the red pepper flakes.
  7. Bake for 30 to 35 minutes.
