THE RICH AND FERTILE GALISTEO BASIN, 14 miles south of Santa Fe, makes for beautiful vistas and an ideal setting for former Chicago “city slicker”/art dealer Tim Willms to set up his Talus Wind Ranch and develop his pork and lamb ranching business. Since 1999, the 460-acre property, along with other small northern and central New Mexico ranches, has been the source of Willms’s heritage meats—natural and grass-fed. Long the darlings of Santa Fe chefs, the Southdown sheep and Berkshire pork products are also available to home cooks at grocers in Taos, Dixon, Santa Fe, Albuquerque, and Las Cruces. Willms gives back to the community with his Whole Hearted Food Fund, which benefits the folks of McKinley and Cibola counties through the Community Pantry, in Gallup. Raising good food and being neighborly are always in style.
