SINCE 1998, THE FOLKS FROM BOXCAR FARMS, in rural Llano, near Peñasco in Taos County, have sold their organic products at the Santa Fe Farmers’ Market. For Avrum Katz and Kristen Davenport, it’s a labor of love. The couple started out raising garlic, potatoes, winter squash, peas, cabbage, root crops, and some greens. In 2018, transitioning from vegetable gardening, they focused their Yucca Bird Herb Farm on medicinal and culinary vinegars, herbal and honeybee products, bitters, and fresh and dried herbs, all harvested in the Sangre de Cristo Mountains. Although they are sold as herbal supplements, these tasty brews belong in the kitchen, adding zip to your dressings, vinaigrettes, cocktails, shrubs, and kombuchas. A splash of the Five Basil Vinegar or Elderberry Vinegar on some organic greens and veggies will make you forget your balsamic forever. They’re very good, and good for you!
