The Nui Nui is a classic tiki cocktail created by the infamous Don the Beachcomber in Hollywood during the 1930s. “Don was notorious for keeping his unique ingredients a secret—even from his staff,” says Daydream Rum Bar owner Isaac Fox. “Our take introduces some new spiced liqueurs to make this the perfect frosty weather escape. It’s best enjoyed fireside in a snowstorm.”

  • 2 ounces Hamilton Demerara 86 Rum 
  • 1 ounce fresh lemon juice 
  • ¾ ounce Spiced Honey Syrup (see next)
  • ¼ ounce Rhum JM Liqueur d’Orange
  • ¼ ounce Licor 43 
  • ¼ ounce Hamilton Pimento Dram 
  • 1 dash Angostura bitters
  • Ice, plus crushed ice
  • Orange and/or lemon peel and baking spice, such as cinnamon (optional) 

Makes 1

1. Add first 7 ingredients to a cocktail shaker and fill with ice. Shake until properly chilled and diluted. Strain into the glass of your choice over crushed ice.

2. Garnish with peel and dust with your favorite baking spice for winter aroma.
