The best part of visiting El Monte in summer is the luck of getting a seat at one of chef Cristina Martinez’s farm-to-table dinners celebrating local produce and fruit from the resort’s trees. Martinez recently introduced what she calls “theatrical elements” to the menu at the hotel’s De La Tierra Restaurant, including a s’more dessert that magically appears from under a dome of smoke, and table-side truffle fries that can be customized with caviar. Chaco’s Level 5 rooftop restaurant and patio offer a stunning view of the Sandía Mountains, and dinner spotlights local ingredients like USDA Prime beef from Ramon Perez Ranch in Yeso. But chef Sean Sinclair is just as excited about simpler fare. “My smashburger won the Edible Smackdown,” he brags, referring to the statewide green chile cheeseburger contest.
