HOW HARD CAN IT BE? Trisha Ray thought several years ago when she offered to make custom sugar-cookie bouquets for each member of her son’s football team. Very hard, it turned out. “They weren’t the prettiest,” she remembers of the jersey- and ball-shaped cookies, “but it brought so much joy to their faces. I was hooked!” By the time she founded Koo-Weh Cookies in 2021, the San Felipe Pueblo baker had perfected her game. Her pop-up and online business now offers flavors like lemon-raspberry and chocolate-chile for her intricate edible art, which includes cookies dressed up as cowboy boots, Gila trout, roadrunners, squash blossom necklaces, and traditional Pueblo dresses. “I’m really proud of the ones specific to my roots and traditions,” says Ray, who makes her own cutters and stencils. She takes custom orders for birthdays, baby showers, holidays, or any event that needs a personal touch. One of her favorite recent projects was a Roswell wedding. “They were really into aliens, so I did a desert scene with a spaceship,” she says. “I’m always on the lookout for local inspiration.”
